Fun {Gluten Free} Baking Ideas at Home

We're all spending more time at home these days and baking is a fun way to pass the time and have something yummy to look forward to.

We wanted to share a few creative ways to add a little pizzazz to a few of our traditional gluten free baking mixes.

Even if your not gluten free, that's okay, you wont know a difference.

Creamy Hazelnut Brownie

What you'll need:

Step 1 – Make Brownies

Directions for Brownies:

- Place contents of bag into mixing bowl.
- Add 2 large eggs.
- Add ¼ cup (2oz.) vegetable oil.
- Add ¼ cup Hazelnut Spread 
- Mix on low speed until incorporated.
- Then mix on medium speed for 2 minutes.
- Spread into an 8x8 silver foil pan.
- Bake at 350 degrees for 25-30 minutes.

 

Step 2 - Finish Up

Once brownies have cooled, add ½ cup Hazelnut Spread  to microwave safe bowl. Microwave for about 30 sec. or until Hazelnut Spread  is runny. Drizzle top of brownies with Hazelnut Spread . Optional: Add nuts on top

Chocolate Mint Brownie 

What you’ll need

 Step 1 – Make Brownie

Directions for Brownies:
  • Place contents of bag into mixing bowl.
  • Add 2 large eggs.
  • Add ¼ cup (2oz.) vegetable oil.
  • Add 1 teaspoon mint extract
  • Mix on low speed until incorporated.
  • Then mix on medium speed for 2 minutes.
  • Spread into an 8x8 silver foil pan.
  • Bake at 350 degrees for 25-30 minutes. Add 1 teaspoon mint extract

Layered Chocolate Trifle Dessert

What you’ll need 

 Step 1 – Make Chocolate Cake

Cake Directions:
  • Place contents of bag into mixing bowl.
  • Add 3 large eggs.
  • Add ½ cup (4oz.) softened butter or margarine.
  • Add ¾ cup (6oz.) of water.
  • Mix for 30 seconds at low speed, scrape down bowl.
  • Mix for two minutes at medium speed.
  • Place into a 9” round cake pan.
  • Bake for 40 min for a 9x9 pan.
  • * Note: For high altitude add 1 tsp of cornstarch.

  Step 2 – Make whipping cream

  • In stand mixer, add 1 cup of heavy whipping cream
  • Add 2 tablespoons powdered sugar
  • Add ½ teaspoon vanilla extract
  • Beat until stiff peak form and set aside

 Step 3 – Prepare and wash fruit & Assemble

 To assemble:

  1. Cut cake into small 1 to 2” cubes
  2. Using 4 individual glass cup, add first layer for chocolate cake
  3. Next add a layer of whipping cream
  4. Add layer of Raspberry Jam (of Jam flavor of your choice)
  5. Add layer of whipping cream
  6. Add layer of chocolate cake
  7. Add layer of whipping cream
  8. Top with fresh fruit

 

Mini Blueberry Tarts

What you’ll need 

Step 1 - Prepare the Blueberries 

  • Crush half of the blueberries. Mix the sugar and cornstarch together and set aside. Add whole and crushed blueberries to bowl and add the sugar and cornstarch mixture. Toss until berries are well coated. Set aside.

Step 2 - Prepare the Pie Crust & Tarts 

  • Preheat oven to 425. Prepare pie crust- Follow directions on package. Cut out six 4-1/2-in. circles; press circles onto bottoms and up sides of greased (butter or oil) muffin cups. Evenly spoon in blueberry mixture. Cut out six 2-in. circles from remaining crust; place over filling. Brush with yolk.
  • Bake for 13-17 minutes until crust is golden and filling bubbles. Cool in pans 10 minutes. To remove, run a spatula or knife around sides of muffin cups and remove tarts.

Doughnut & Fruit Kabobs

What you'll need

Step 1 – Make Doughnut Holes

Directions

  • Add contents of Doughnut mix bag to mixing bowl
  • Add ½ cup softened butter, 1 Tbsp. corn syrup & 16 oz. (2 cups) warm water (98°). Mix on medium speed until incorporated (about 1 to 2 minute).
  • Dust work surface with Rice Flour (included with mix).
  • Place dough onto work surface and pat down with hands, dust top of dough with Rice Flour.
  • Roll out dough until approximately ¼" thick.
  • Using 1 1/4-inch round cookie cutter, cut out the doughnut holes and arrange on baking sheet or plate.
  • Let doughnuts proof for 1 hour in a warm area.
  • Heat oil in a large deep skillet to 375°F. Fry doughnuts in the hot oil until golden brown, turning over 1 time.
  • Drain on paper towels.
  • Dust with sugar or confectioners sugar while they are still warm. Or add your choice of glaze. Serve warm.

Step 2 – Prepare and Cut fruit into chucks

Step 3 - Assemble

Add doughnut holes and fruit chucks to skewer , alternating between fruit and doughnut hole.
