Gluten Free Zucchini Bread

Christmas is just around the corner and when I think of the treasured gifts of the year, one that comes to mind is my mom’s zucchini bread. Every year we would make several loafs to give away to family and friends. Abundant Life Foods gluten free all-purpose flour makes it easy to convert my favorite sweet bread recipe gluten free without missing out on the deliciousness that I remember. Try this great recipe below.


 Zucchini Bread

Dry Mixture

1 1/3 cup Abundant Life Foods All-purpose Flour

3 tablespoons flax or chia seeds (optional)

½ teaspoon baking soda

½ + 1/8 teaspoon baking powder

1 ½ teaspoon cinnamon

Mix and set aside:

2 eggs + 1 egg

1 cup sugar

1/3 cup oil

1 ½ teaspoon vanilla

1 cup zucchini


Beat eggs and sugar until light and fluffy (about 2 min). Add oil and vanilla and mix well. Add dry mixture and beat 1 minute. Stir in zucchini. Pour into 1 greased load pan. Bake at 325 degrees for 55 -60 minutes or until toothpick comes out clean. Let sit for a couple minutes before turning out of pan. Cool completely before cutting. Store wrapped in foil or freeze. Recipe can be doubled.
