Gluten Free Super Moist Coffee Cake Muffins

Streusel Topping:

Middle Streusel (Optional)

  • 1/4 cup sugar
  • 1 teaspoons cinnamon
  • 1 teaspoons vanilla extract
  • 1/4 cup chopped walnuts (optional)


  1. Preheat the oven to 350°F. Place muffin liners in muffin pan.
  2. In a bowl mix together butter, sugar, and eggs.
  3. In a separate bowl mix together flour, baking powder, baking soda, and salt.
  4. Mix the dry into the wet, while alternately mixing in the Greek yogurt.
  5. In a separate bowl, mix together the middle streusel ingredients and set aside.
  6. In a separate bowl, mix together the streusel topping ingredients and set aside.
  7. Pour 1 tablespoon of batter into each cupcake tin, then sprinkle some middle streusel in each cup, and then finish by adding 1 tablespoon of batter on top of each cupcake. If omitting middle streusel, place about 2 tablespoons batter into each muffin tin.
  8. Sprinkle streusel topping on ton each muffin.
  9. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
