Gluten Free Zucchini Bread


Zucchini Bread

Dry Mixture

1 1/3 cup Abundant Life Foods All-purpose Flour

3 tablespoons flax or chia seeds (optional)

½ teaspoon baking soda

½ + 1/8 teaspoon baking powder

1 ½ teaspoon cinnamon

Mix and set aside:

2 eggs + 1 egg

1 cup sugar

1/3 cup oil

1 ½ teaspoon vanilla

1 cup zucchini


Beat eggs and sugar until light and fluffy (about 2 min). Add oil and vanilla and mix well. Add dry mixture and beat 1 minute. Stir in zucchini. Pour into 1 greased load pan. Bake at 325 degrees for 55 -60 minutes or until toothpick comes out clean. Let sit for a couple of minutes before turning out of pan. Cool completely before cutting. Store wrapped in foil or freeze. Recipe can be doubled.
